The Steak Out has been a fixture of Sonoita for more than sixty years, serving beef, mesquite, music, and margaritas in an authentically Western setting that’s stood the test of time. In 1978, The Wystrach family came to own it the way good things often happen — by happenstance — and have kept the tradition alive ever since, rebuilding from the ground up after a fire leveled the original structure in the late 1990s. The doors reopened in December 1999 and the place has never looked back.
The formula has always been simple. Dry-aged, high-quality beef, steaks hand-cut in house and cooked to perfection over an open mesquite grill, slow-roasted ribs, in-house ground burgers made from the highest quality cuts, a full bar, local wines, live music — the same formula that’s worked from the beginning. More people have discovered Sonoita over the years, drawn by the cooler climate, picturesque landscape, and slower pace of life. The Steak Out has been here to greet them all.

Midland Connection
Ever wonder why The Steak Out features Grammy-nominated country trio Midland? You might have spotted our copy of their 2x platinum record, "Drinking Problem," on the wall. And you probably know the words by heart.
Midland frontman Mark Wystrach is the son of our proprietors, Mike and Grace Wystrach, who have owned The Steak Out since the late 1970s. Mark and his five siblings grew up serving our patrons, and he played guitar on our bandstand long before the bright lights of Nashville came calling.
In 2020, Midland launched Insólito, their signature tequila. It's 100% blue agave tequila, distilled in the Sierra del Tigre mountains of Jalisco, Mexico, certified additive-free, and bottled in artisan glass across Blanco, Reposado, and Añejo styles. We keep it stocked behind the bar and on our shelves, so you can take a bottle home or give one as a gift.
